How do I manage airflow (vents, draft door, and top cap) to control temperature?

Use repeatable vent positions for different cook styles.

Overview

Airflow from the draft door to the top cap sets temperature.

Typical settings

  • Startup: both vents fully open until near target.
  • Low and slow: bottom ~¼ inch; top a narrow slit.
  • Roast (350–450°F): bottom 1–2 inches; top half open.
  • Sear (600°F+): vents fully open—monitor closely.

If vents seem unresponsive

Clean ash, clear grate holes, and remove small lump blocking airflow.
